Ingredients

500g of low-fat veal
2 carrots
200g of button mushrooms
1 egg yolk
1 onion
1 tablespoons of cornflour
Thyme, Parsley, Bay leaves
Salt, Pepper


Carefully clean 500g of low-fat veal and remove the fat. Season with parsley, pepper, 1 onion cut into quarters, salt, thyme and 2 bay leaves . Put into a pressure cooker with 50 cl of water, the chopped carrots and mushrooms, and cook for 20 mins once the valve has been released. Open when there is no more pressure. Remove the onion and bay leaves, then pour off all the cooking juices and put to one side. Add 1 table spoons of cornflour and 1 egg yolk to the meat. Put back on a low heat and moisten the meat with the cooking juices, stirring to obtain a good sauce.
