|2 large eggplants or zucchinis or one of each
250 grams of mushrooms
1 red and one green bell pepper
Fresh parsley and celery leaves (quite a bit)
350 grams of non-fat quark
2 egg yolks
pepper/salt (or better: low sodium low fat bouillon powder instead of salt)
(you can experiment with other vegetables)
Preheat oven on 180C.
Cut the eggplants/zucchinis in half, length-wise, and use a spoon to take out the middle (creating boat-like shapes).
Cut what you got out in pieces and put in fry pan.
Put the “boats" in a pan with some water and cook for 5 minutes. Get them out and put them into a baking pan, to be filled.
Clean and cut all the other vegetables and put them with the little pieces of eggplant/zucchini in the frying panand add the cut herbs. Fry (not too long). Add pepper and salt (I use low sodium low fat bouillon powder instead of salt).
Take the fry pan off the heat source and add egg yolks and quark. Stir. Put this stuffing on top of the boat-shapes. I usually have much more filling than fits in the boat shapes so I just add it all to the baking pan.
45 minutes in oven at 180C.
It can stay a bit wet but the sauce is good too. Enjoy!
