Quark Alternative

Pour 1 or 2 l low fat buttermilk in dish. Cover. Cook in oven overnight on lowest temperature. Pour in cloth bag. (Carefully) Allow to drain. Voila Quark.

I have been making this by using my slow cooker. I've been putting 2 -3 cartoons of skim buttermilk. Putting on slow & cooking 6 hrs. Then turned it off befor eI went to bed. Lined my colander with a thin teatowel and drained most of the fluid away (drained to much once and it was really hard afterwards) & then you're left with quark.

I like mixing a bit of splenda, vanilla & cinnamon in for a treat.

Mix half non fat cottage cheese and half non fat Greek yogurt together for cheese that is similar to Quark.

Lower Fat Quark Recipe

If you cannot get Quark I make my own. it is very easy.

For nearly zero Fat put in the following

1 liter Butter milk 2% fat

1 liter Skim milk

place into large oven pot

I covered mine with baking paper and then tin foil

turn oven on to 150F which is about 65C

leave cooking over night 8 to 12 hours

or durring day your choice of course

Using a strainer and coffee filters or muslin cloth strain the liquid from pot let drip for about an hour. When all the liquid has dripped away put in a container and put in Fridge until totaly cooled down.

Bring back out of fridge add salt to tast now what you do is 2 table spoons at a time add a bit of skim milk to the cheese and stir in until it is a nice consistancy. put back in the fridge and eat when ever you like.

Will keep for 1 week in Fridge.

If you do not mind 2% fat in your quark just do it with butter milk. only using the skim milk to smooth at the end.
